How to Sneak Fruits & Veggies Into More Meals
We probably don’t need to remind you that fruits and veggies are good for our bodies. But even those of us who are motivated to eat well may find that getting the recommended amount of produce onto your plate can be a big ask.
Adding fruits and veggies to your day doesn’t need to be a chore—it can be delicious! Check out these healthy hacks below.
1. Eat your beans!
That’s not a typo—we said beans. You may have heard of beans being called a “magical fruit,” but according to the USDA, they count as a vegetable (and a great source of protein). Try adding beans to soups and stews, blend them into yummy dips, or add cooked beans to meatballs or burgers.
2. Get a jumpstart at breakfast
It’s easier than you might think to add fruits and veggies to your breakfast. Add pre-washed spinach and frozen bell pepper strips to an omelet or tofu scramble. You can also add some berries or melon to the side of almost any breakfast for a boost of vitamin C.
3. Add crunch with coleslaw
Coleslaw is made from cabbage, which is a nutrient-packed cruciferous vegetable similar to broccoli. Keep a pre-cut coleslaw mix in the fridge and throw it into wraps and salads for extra crunch—and, of course, extra veggies.
4. Swap meat for mushrooms
When you dice and brown mushrooms, you can use them instead of meat in all sorts of dishes, from sloppy joes to tacos.
5. Add veggies you like to dishes you love
Add some peppers to your quesadilla. Throw in some cooked peas or broccoli into your mac ‘n cheese. Add zucchini slices to your lasagna. You might be surprised how well these healthy additions elevate and refresh some old favorites!
