One Month of Low Carb Meatless Mondays
You’ve probably heard that eating less meat is good for your health—and the environment. You’ve probably even heard of Meatless Mondays – when you dedicate one day a week to eating all vegetarian meals.
It’s actually pretty easy to eat meat-free, but things get tricky when you start watching your carbs. Most people find it easy enough to scramble up a low-carb breakfast and eat a salad for lunch once a week, but finding low-carb meatless dinners the whole family will enjoy? That’s another story. To keep things simple, we’re sharing 5 of our favorite dinner recipes for your first month of Meatless Mondays. Bon Appetit!
1. Crispy Peanut Tofu Stir-Fry
From Minimalist Baker

Crispy baked tofu meets cauliflower rice in a rich peanut sauce. If you’re short on time, check your grocery store for bags of microwaveable cauliflower rice.
2. Crustless Mushroom Spinach Pie
From Sugar-Free Mom

If you have picky eaters at home, don’t even mention the word “meatless” when you serve up this comforting meal. Or…at least don’t mention it until after they ask for seconds.
3. Tempeh Vegan Burrito Bowl
From Live Eat Learn

A hearty bowl of low-carb deliciousness. If tempeh isn’t your speed, this recipe would also taste great with Soy Chorizo.
4. Egg Drop Soup
From KetoDiet App

Having a cozy night in? Warm up with a satisfying bowl of egg drop soup.
5. Cauliflower & Artichoke Pizza
From Diet Doctor

It’s pizza night! Need we say more? This clever recipe uses cauliflower to create a low-carb crust. Top with your favorite veggies!
