With simple ingredient swaps like opting for a low-sodium chicken broth, or using milk instead of heavy cream, you’ll get all the flavor and comfort without the excess sodium or fat. Plus, we upped the veggies in this recipe for a creamy yet nutrient packed meal. Get your serving of Vitamins A and C with this perfect comfort food.

 

Broccoli Cheddar Soup

Ingredients:

  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 2 tablespoons of all-purpose flour
  • 2 cups low sodium chicken broth
  • 2 cups of milk
  • 2 cups chopped broccoli florets
  • 2 cups grated cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté onion and garlic in olive oil until softened.
  2. While sautéing, add in the all-purpose flour and continue stirring
  3. Add the low sodium chicken broth, carrots, and broccoli to the pot. Bring to a boil, then reduce heat and simmer for about 10 minutes or until broccoli is tender.
  4. Add in the heavy cream and continue to simmer for a few minutes.
  5. Season with salt and pepper to taste.

Serve & enjoy!
