Broccoli Cheddar Soup
Ingredients:
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of all-purpose flour
- 2 cups low sodium chicken broth
- 2 cups of milk
- 2 cups chopped broccoli florets
- 2 cups grated cheddar cheese
- Salt and pepper to taste
Instructions:
- In a large pot, sauté onion and garlic in olive oil until softened.
- While sautéing, add in the all-purpose flour and continue stirring
- Add the low sodium chicken broth, carrots, and broccoli to the pot. Bring to a boil, then reduce heat and simmer for about 10 minutes or until broccoli is tender.
- Add in the heavy cream and continue to simmer for a few minutes.
- Season with salt and pepper to taste.
